Some years back an acquaintance from Altona sent me a picture of a billboard.  It said "Australian beef, a jump ahead of the rest".  At the time there was a rumor going around that McDonalds was getting its beef for burgers from Australia and it was actually kangaroo meat.  Caused quite an uproar.

you can come to Louisiana and get wild emu....it seems somone turned a bunch loose in the swamp, some guy had pictures on his game camera of emus eating his corn.

yep.....tators!  Actually its more like stew than chili.......but whatever it is its darn good.  I'll get the details from her tonight.

We also use spud's from time to time to to put the chili on. I'll do up some of my fried spuds and pour the chili over them. That's beanless chili BTW.

Tonight the wife is making her very good clam chowder. Yep, it's from scratch with clams we dig.

Since we live up here in N.W. Washington State, There is great access to some very good seafood. I'll post a recipe that anyone  anywhere can make since you use canned clams. It's the same one we use except for the fresh clams if we have them. C.W.
